🥗 Tomato Cucumber Edamame Salad

This light and refreshing salad is packed with protein-rich edamame, crisp cucumbers, juicy tomatoes, and a tangy vinaigrette made with apple cider vinegar and balsamic vinegar. Perfect as a side dish or a healthy lunch!  


🌿 Ingredients

  • 1 cup shelled frozen edamame (rinsed and slightly thawed)

  • 1 cup cherry tomatoes, halved (or diced regular tomatoes)

  • 1 medium cucumber, diced

  • 1/4 cup red onion, diced

  • 2 Tablespoons extra virgin olive oil

  • 1 Tablespoon apple cider vinegar

  • 1 Tablespoon balsamic vinegar

  • Salt and black pepper, to taste

  • Pinch of cayenne pepper (optional)

  • Fresh parsley or basil, chopped (optional)


🥣 Instructions

  1. In a large mixing bowl, combine edamame, tomatoes, cucumber, and red onion.

  2. In a small bowl, whisk together olive oil, apple cider vinegar, balsamic vinegar, salt, pepper, and cayenne until emulsified.

  3. Pour the dressing over the vegetables and toss until evenly coated.

  4. Taste and adjust seasoning as needed.

  5. Garnish with fresh herbs if desired.

  6. Serve immediately, or refrigerate for 15–30 minutes to let the flavors meld.
