🥗 Tomato Cucumber Edamame Salad
This light and refreshing salad is packed with protein-rich edamame, crisp cucumbers, juicy tomatoes, and a tangy vinaigrette made with apple cider vinegar and balsamic vinegar. Perfect as a side dish or a healthy lunch!
🌿 Ingredients

1 cup shelled frozen edamame (rinsed and slightly thawed)

1 cup cherry tomatoes, halved (or diced regular tomatoes)

1 medium cucumber, diced
1/4 cup red onion, diced

2 Tablespoons extra virgin olive oil

1 Tablespoon apple cider vinegar

In a large mixing bowl, combine edamame, tomatoes, cucumber, and red onion.
